Bikini Recipe

Yields 10 people

For the Clementine Cordial (produces 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g caster sugar

To make the Cocktail (makes 850ml, to serve 10)

400ml decent vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (see above)
Fresh cranberries, as a garnish
Mandarin essential oil, as a final touch

Directions

To prepare the Citrus Syrup: Put all the components inside a pot, heat until it reaches a light boil, mixing so the sugar melts. Then, remove from the heat allowing it to reach room temperature completely. Pour to a sterilised bottle, close it and store in the fridge, where it will keep for about a month.

Preparing the Batch Mix: Combine the specified liquid ingredients into a sizeable container, let it rest for an hour, then pass it through preferably using muslin, making it fully clarified.

When ready to serve: Measure 85ml of the premix to a stirring glass containing ice, and agitate gently for about 60 seconds to cool it down. Pour into a chilled martini glass or similar, top with a few cranberries and complete it with a brief mist with the mandarin essence above the glass.
